Spend an evening at COMO The Treasury before meeting our private jet. We make a quick stop in Busselton then head to Margaret River, a region where over a quarter of Australia’s wines are produced. At Cape Lodge, it feels like we’ve checked in to our own private country estate amid rows of vines. Over the course of our time here, choose to explore a selection of renowned wineries, including Leeuwin Estate and Vasse Felix. We’ll experience a memorable meal at our lodge’s celebrated restaurant and round-off our discovery with an exclusive seven-course dinner paired to limited release wines at Voyager Estate.

Our private jet soars over the Super Pit open-cut mine before delivering us at Kalgoorlie. We’ll fill up on lunch at the local pub and head to the mine for a close inspection before retiring to the Rydges Kalgoorlie Resort and Spa. Continuing on, we fly direct to Port Lincoln where the Port Lincoln Hotel welcomes us. Enjoy local brews at Beer Garden Brewing and taste a selection of the best Eyre Peninsula produce at Teakle Winery. Your World experiences gives us the chance to pick, shuck and slurp oysters at Coffin Bay Oyster Farm, or swim with sea lions.

Set to uncover another of Australia’s foodie hot spots, our private jet lands on Kangaroo Island. We head straight for Southern Ocean Lodge, ranked among the world’s finest residences. We are introduced to the local offerings with a gourmet outdoor picnic and later, an exquisite meal prepared by the lodge’s chef, Asher Blackford. We’ll also walk among a colony of sea lions, view the Remarkable Rocks, enjoy brisk coastal cliff walks and perhaps even set out on a quad-biking adventure.

One of the many benefits of private jet travel is the ability to devise our own route. Today, we’ll fly to Mount Gambier simply to indulge our palates with a visit to the Coonawarra wine region. Here, a winemaker at Yalumba’s The Menzies Cabernet Sauvignon vineyard will open the cellar doors just for our group. Back on our jet, we fly over the Twelve Apostles before landing at Hobart. The impressive MACq 01 hotel is our base here for the next three nights.

With a full day to explore Bruny Island, you might enjoy a cellar door lunch, visit the island’s lighthouse and search for white wallabies. Or, take to the water on a boat in search of seals, dolphins and birds. Then, back in Hobart, deciding whether to dine at Aloft or the Drunken Admiral will be a tough choice. The next day is dedicated to MONA, the Museum of Old and New Art, with plenty of time to explore its quirky exhibitions before an equally astounding lunch at the onsite restaurant and a private tour of its winery, Moorilla. Rejoining our jet, there’s time for one final culinary adventure before we arrive at Sydney.
