Southern Ocean Lodge, Kangaroo Island
Stay at the new-look Southern Ocean Lodge shortly after its much-anticipated re-opening. A favourite among Captain’s Choice guests, the lodge has been painstakingly rebuilt after succumbing to the 2020 bushfires that devastated the island. During our stay, our group will enjoy exclusive use of the lodge.

Saffire Freycinet
We have sole use of Saffire Freycinet, whose considered use of materials has seen it win several design awards. With its striking views of the Hazards mountain range and Coles Bay, the property maintains an ideal balance of stylish modernity set within an ancient and pristine landscape.

Lake House, Daylesford
The Lake House provides a serene setting on the shores of Lake Daylesford. Relax along the property’s terrace and admire rows of spotted gum and silver birch reaching skyward. Dine within the two-hatted Lake House Restaurant and perhaps meet the sommelier in the Cellar Room.

Enjoy the Many Aspects of Wineglass Bay
Join a local guide for a walk through the magnificent wilderness of Freycinet National Park. Reach Wineglass Bay Lookout and admire the pristine waters and sandy beach below. Then embark upon a cruise of the bay, absorbing views of soaring cliffs and diverse birdlife, before witnessing a spectacular sunset.


Relish a Range of Gourmet Experiences
Savour oysters freshly caught at a Freycinet oyster farm. Sample Craigie Knowe’s quality wines, paired with chocolate and cheese. Join a cooking masterclass at Daylesford’s Lake House and acquaint yourself with a few of its 10,000 bottles of wine during a private tasting. Enjoy delicious multi-course meals at each lodge.


Kangaroo Island Parks & Wildlife
See one of the largest colonies of Australian sea lions at Seal Bay Conservation Park. At Flinders Chase National Park, admire the Remarkable Rocks and Admiral’s Arch. Take a private nocturnal tour to see koalas at their most active, and have up-close encounters with kangaroos, wallabies and possums.

Fly By Economy Class Private Jet
Link each destination with ease, flying aboard our Embraer 145 private jet. Enjoy convenience and service not enjoyed by regular travellers, on routes not offered by commercial airlines. Normally seating 50, the jet will be reserved for 35 guests during our journey, which begins and ends in Sydney.

Waterfront Pool Studios are located adjacent to the property’s solar heated infinity pool. Recently renovated, each studio features a comfortable king size bed and wide sofa, while soft furnishings inspire an added touch of luxury.

As Your Tour Manager, Roger Byrne Welcomes You On This Journey
Our private jet journey begins as we board in Sydney and depart for Launceston. Here, we take a brief tour of one of Australia’s oldest cities, before enjoying lunch at Stelo at Pierre’s, Launceston’s renowned Italian restaurant. Relax during our scenic drive, as we head toward Tasmania’s eastern coast, our destination the spectacular Freycinet Peninsula. Our enchanting retreat is Saffire Freycinet, whose sleek interiors, sublime dining, and captivating views make it an absolute delight to spend three nights here. Each suite boasts its own private courtyard and deck to take in the majestic scenery. Take the rest of the afternoon at leisure before we reconvene at our lodge’s Palate restaurant for a Welcome Dinner.
Freycinet Peninsula
After breakfast, our discovery of Tasmania’s riches continues. Select from one of the following morning Your World experiences, each showcasing Freycinet’s natural beauty:
— Join Indigenous Guide Mick Quilliam for a walk along Freycinet’s coastal tracks. Discover the local flora and fauna, sample some bush tucker, and learn about the Oyster Bay people.
— Wind your way through enchanting bushland, as you gradually make your approach to the Wineglass Bay Lookout. Gaze out to the pristine waters and sandy beach below and listen as your informative guide relays some of the fascinating aspects of the peninsula’s history.
— Visit an oyster farm within Coles Bay, where you’ll gain an appreciation for the region’s ecology. While here, don a pair of waders and savour the delicate flavours of freshly shucked oysters.
After lunch at our lodge, afternoon Your World experiences encourage further discovery:
— Call in on the oldest vineyard along Tasmania’s east coast. Discover the production processes of Craigie Knowe’s quality wines and take a tour with winemaker Glenn Travers. Afterwards, enjoy wine, paired with cheese and chocolate, while relaxing in the property’s homestead.
— Indulge in a relaxing massage at our lodge’s spa. The spa’s extensive massage menu and signature treatments will have you feeling refreshed and ready for further adventures.
— The following Your World experiences from this morning are also available again this afternoon: You may like to join Mick Quilliam for a coastal walk or sample freshly shucked oysters at a Coles Bay oyster farm.
Should you not wish to join any of the morning or afternoon Your World experiences, you’re always welcome to remain at our remarkable accommodation. Opportunities to fish from the shores of Great Oyster Bay, or to head out on a mountain bike to explore the breathtaking wilderness at your own pace are also available.
Later this afternoon, we come together for a cruise of Wineglass Bay. Take in views of Freycinet’s spectacular granite cliffs, majestic birdlife, and pristine waters, before admiring an incredible sunset while aboard our sleek vessel. Upon returning to our lodge, savour a multi-course degustation menu at Palate restaurant.

Bendigo, Daylesford
An early start today sees us on the road shortly after breakfast for our return to Launceston. Here, we meet back up with our private jet and fly directly to Bendigo, in Victoria’s famed goldfields region. After lunch at a delightful lakefront restaurant, we board a chartered tram bound for the Central Deborah Gold Mine. A southerly drive through regional Victoria then sees us arriving in Daylesford, within the state’s renowned mineral springs and spa region. Here, we enjoy three nights at the tranquil Lake House. Take the remainder of the afternoon at leisure before reconvening for dinner in the Lake House’s Waterfront Pavilion.
Daylesford
Bask in the sun’s morning rays as you round Lake Daylesford before breakfast.
Spend the remainder of your morning enjoying a Your World experience:
— Join the Lake House chef for a hands-on cooking masterclass. Work with the region’s finest produce and acquire a few new culinary techniques.
— Head to one of the region’s renowned day spas for an invigorating treatment. Relax within a peaceful environment and surrender to your choice of restorative rituals.
You may prefer to head off in search of something special at one of Daylesford’s many boutiques and gift shops.
After a leisurely lunch, we take a historical walking tour of Daylesford, during which the colonial, pre-colonial, and even pre-historic, past is brought to life. Later, meet the Lake House sommelier and familiarise yourself with some of the Cellar Room’s 10,000 bottles of wine during a private tasting. Savour the seasonal flavours in the Lake House dining room this evening or venture to one of Daylesford’s other outstanding restaurants.
Daylesford
This morning, take the opportunity to learn about the history and environment of the Central Highlands. During a tour, hear all about the gold mining era and its Swiss-Italian settlers, the region’s native flora and fauna and, of course, its famous mineral springs. Naturally, you’re also free to browse the wares on offer at Daylesford’s arts, crafts and antique stores, as well as its many cafes. Afterwards, we reconvene for a gourmet barbecue lunch on the Lake House terrace.
Following lunch, we turn our attention to the Wombat Hill Botanical Gardens. Sitting atop an extinct volcano, the gardens are home to majestic conifers and a fern gully. The Pioneers Lookout Tower here grants us uninterrupted views of Daylesford. Later this afternoon, we make our way to The Convent, a historic 19th-century mansion and art gallery. During our private tour, we admire the works of local and international artists, while availing ourselves of canapes and sparkling wine. This evening’s dinner takes place within the two-hatted Lake House Restaurant.
Bendigo, Kangaroo Island
After breakfast, depart for Bendigo and meet up with our private jet once more. We fly directly to Kangaroo Island, renowned for its numerous wildlife species. For the next three nights, we have exclusive use of the luxurious Southern Ocean Lodge. Enjoy lunch on arrival, before taking the rest of the afternoon to acquaint yourself with your spectacular suite. We later retreat to a charming corner of bushland to toast the setting sun, while keeping an eye out for grazing kangaroos, as well as wallabies, echidnas and koalas. A sumptuous four-course dinner awaits our return to Southern Ocean Lodge.
Kangaroo Island
Enjoy a choice of Your World experiences this morning:
— Journey into Flinders Chase National Park and discover the Remarkable Rocks, giant boulders sculpted by 500 million years of rain, wind and waves. Then stand before the distinctive form of Admiral’s Arch. From a viewing platform in front of this showpiece of nature, you may be able to observe the local fur seal colony frolicking below. You will also have the opportunity to stand before the Cape du Couedic Lighthouse.
— Alternatively, take a guided coastal walk along the limestone cliffs of Hanson Bay. Gaze across the Southern Ocean while hearing about the diverse ecology and resilience of the region. On your return to our lodge, enjoy a presentation on Kangaroo Island’s discovery and natural heritage.
Following lunch, afternoon Your World experiences present further opportunities for exploration:
— Get up close to one of the largest colonies of Australian sea lions during a walk around Seal Bay Conservation Park. Join our lodge’s guide and learn about the unique breeding cycle of these exquisite marine mammals, as well as the ongoing research into their declining population.
— Should you not have taken the opportunity to do so this morning, perhaps opt to join the Hanson Bay coastal walk.
— Give yourself over to the expert hands of our lodge’s spa staff during a revitalising massage.
As always, you may opt to remain at our lodge, rather than joining any of the above Your World experiences. Perhaps make the most of our lodge’s facilities, or simply gaze out to your astonishing surroundings from the comfort of your suite.
Avail yourself of another opportunity to head out into the bush and admire a magnificent Kangaroo Island sunset. As you soak up the natural beauty of the surrounding wilderness, enjoy refreshments and keep watch for kangaroos and some of the other resident wildlife.
Later this evening, an optional nocturnal tour elevates our wildlife experience. Hanson Bay Wildlife Sanctuary hosts us for a private tour, during which we will have the chance to see koalas during their most active time. You are also likely to encounter kangaroos, wallabies and possums up-close. While here, also keep a look out for owls, bats and echidnas.
Kangaroo Island
On our final day on Kangaroo Island, all of yesterday’s experiences are available once again. Enjoy your choice of Your World experiences and wildlife opportunities, or simply use your remaining time to lap up the facilities of Southern Ocean Lodge.
Sydney
Relish arresting Southern Ocean views through the restaurant’s panoramic windows for a final time during this morning’s breakfast. At Kingscote Airport, we meet back up with our private jet for our final flight to Sydney. Partake of the fine wines and lunch on board while swapping stories with your fellow travellers. Our journey concludes as we touch down in Sydney.
