From iconic events like the Birdsville Races to up close encounters with the traditional Uluru family or even the exhilarating experience of jet boating the white water of Horizontal Falls, few regions in the world are bestowed with so much diversity and beauty.

We fly straight from Sydney to Birdsville for the historic Birdsville Races. We then travel to the Red Centre, checking in to the Sails in the Desert. You may choose to upgrade to Longitude 131°, with views of Uluru. Watch the sun rise over Uluru, before seeing the great rock up close. Later, we're treated to a unique dining experience under the desert sky, with views of Uluru and Kata Tjuta.

We fly direct to Broome from Uluru, a route unavailable on commercial airlines. Then, at the stunning Cable Beach Club Resort & Spa, we gather for drinks and canapes while admiring sweeping Indian Ocean views. Broome's founding is inextricably linked to the pearling industry, and we enjoy an eye-opening tour of one of the last remaining pearl luggers. In the afternoon, take to the skies for a view of the cliffs that line the Kimberley coast.

Exchanging our jet for a light aircraft, we fly low over the Bungle Bungle Range as we make our way to the Berkeley River Lodge. This evening, we dine at the Dunes restaurant, with spectacular views of the Timor Sea.

Join a river boat for an exploration of the river gorge, stopping along the way for bushwalks and cooling dips in secluded waterholes. You could also go fishing in places few have ever cast a line, later handing your catch to the lodge's chef, who will cook it for your dinner.

We next fly to Darwin, touring its streets before heading to the Hilton Darwin. Take a stroll on Mindil Beach, then choose from the many waterfront restaurants. Choose to visit Litchfield National Park, including Florence and Wangi falls, or perhaps go further to Kakadu National Park.

Cruising Katherine Gorge, we come across a series of thirteen deep sandstone gorges. Our home for the night, Cicada Lodge, is a luxury eco-resort owned and run by the Jawoyn people. Be dazzled by chef Mark Olive’s use of local bush bananas, native freshwater shellfish and crocodile tail.

After choosing from a morning helicopter flight or a cruise along the river, our private jet whisks us away to Alice Springs. While known for its red dirt, it's also known for the region's natural marvels and boasts a vibrant Aboriginal culture. We tour downtown Alice, then check in to the DoubleTree Hilton for two nights. Floating over the desert, we take in the West MacDonnell Ranges with a hot air balloon flight at sunrise, scanning the ground for red kangaroos and other wildlife.

Because of Coober Pedy's hot desert location, the Desert Cave Hotel was built underground. Here we have the choice of underground or above ground rooms. We delve into the history of Coober Pedy at the Umoona Opal Mine and Museum, one of the original mines worked in the 1920s. Just north of here is the Breakaways Reserve, a range of white, ochre and brown hills that have 'broken away' from the Stuart Range.

We head for Broken Hill, an iconic rural town and location of the Royal Flying Doctor Service Visitor Centre. At Living Desert State Park, we savour a barbecue lunch before we return to Sydney. This epic exploration of the rarely seen parts of Australia will stay with us for forever.
